I came up with this recipe while in grad school. Living on my own, I needed a meal that was small enough for just me but also filling, nutritious, and quick.
Ingredients:
- 2 handfuls of egg noodles
- 2 Chicken bouillon cubes or pouches
- 2 cups water
Optional:
- cooked chicken (lunch meat if nothing else is on hand)
- baby carrots, chopped
- seasonings (whatever I have on hand)
Instructions:
Easiest recipe ever. Place 2 cups of water in a pot, add bouillon cubes, seasonings, and carrots (if you’re using them). Bring to a boil, add egg noodles, and cook for as long as the instructions on the egg noodles package indicate (often 8 minutes, but could go as long as 11 minutes). When only a few minutes are left for the noodles, add the chicken. Serve.
See? Totally lazy, and totally delicious. Much better than that canned stuff.
